One Pot Paleo Meal


Prep Notes

A few ingredients come together for a quick and easy one pot paleo meal!

Ingredients

2-3 zucchini, summer squash or combination of the two, chopped

1 small onion, chopped

2 fresh tomatoes, chopped

1 lb browned ground turkey

Fresh chopped oregano, basil and parsley to taste

Sea salt and pepper to taste

Extra virgin olive oil for sautéing vegetables (I use Whole Foods, 365 Everyday Value Brand; http://www.wholefoodsmarket.com/about-our-products/product-lines/365-everyday-value)

Directions

Saute garlic, onion, zucchini and tomato until soft; add browned ground turkey and mix well- fold in chopped fresh oregano, basil, parsley-add sea salt & pepper to taste- serve and enjoy! No reason dessert can't be simple and tasty be too! Toss sliced apples with a squeeze of fresh lemon juice and ground cinnamon. It’s a delicious & refreshing gluten-free, dairy-free, soy-free clean treat.
