Apple and Red Cabbage Cole Slaw Recipe


1/2 cup soy free mayonnaise (I use Hampton Creek Just Mayo brand; )

1/4 cup dairy-free plain yogurt (I use So Delicious brand Greek Style Plain Coconut Milk Yogurt)

1 Tbs coconut palm sugar

2 Tbs raw apple cider vinegar (I use Bragg brand; )

1 tsp Dijon mustard

Dash of pepper, sea salt

 Dash of celery seasoning (optional)

1 small head of red cabbage, finely shredded

1 large Granny Smith Apple, cut in fine matchstick slices

Feel free to add any other fresh herbs such as parsley or mint to further freshen it up!


Mix mayonnaise, yogurt, palm sugar, vinegar, mustard, salt, pepper, celery seasoning (if using).Rinse shredded cabbage and place in a large bowl, mix in apples and fresh herbs (if using). Stir in dressing and gently fold until thoroughly combined. Refrigerate at least an hour to allow flavors to blend.
