Apple Walnut Salad


Prep Notes

The flavors of fall come together perfectly in a delicious gluten-free, dairy-free, soy-free salad! Apples, walnuts, celery, spring mix and the first pomegranate seeds of the season! Deliciously mixed with maple-walnut apple cider vinaigrette!

Ingredients

Ingredients for salad:

1-2 apples, cored, seeded and chopped

¼-1/2 cup coarsely chopped raw walnuts

½ stalks of celery, diced

¼-1/2 cup pomegranate seeds

Spring mix


Ingredients for maple-walnut apple cider vinaigrette:

1-2 Tbs walnut oil

1 Tbs raw apple cider vinegar (I use Bragg Raw Apple Cider Vinegar; http://www.bragg.com/) 

A splash of pure maple syrup

Directions

Fill a large salad bowl with spring mix. Top with chopped apples, walnuts, celery and pomegranate. Toss lightly with a maple-walnut apple cider vinaigrette; whisk together a tablespoon or two of walnut oil, a tablespoon of raw apple cider vinegar and a splash of pure maple syrup. The pomegranate is a beautiful and tasty reminder that the holidays aren’t far away!
