Brownie Batter Bites

Looking for a healthier alternative to for your co-workers to enjoy during the meeting at the office, an afternoon snack for the kids, or to boost your own energy when that afternoon lull hits? Skip the cookies and bring this delicious treat! These delicious bites taste decadent but are filled with protein, healthy omega-3 fats and naturally sweetened with dates! A treat that’ll keep your team, your kids and you sharp, energized and focused! Makes about 24-1 ½” bites; more or less, depending on size.

Ingredients

1 ½ cups raw walnuts

¾ cup unsweetened cocoa

10 pitted dates, soaked for about an hour

1/3 cup water

¼ cup cacao nibs

1 tsp pure vanilla extract

½ tsp sea salt

unsweetened shredded coconut for rolling in

Directions

Place walnuts in a food processor and pulse until coarsely chopped. Add cocoa, dates, water, vanilla and salt and blend until a smooth dough forms. Form into 1” balls and roll in unsweetened coconut. Store in the refrigerator.
