Bruschetta & Gluten Free Garlic Toast Rounds

Gluten-free and thinking enjoying bruschetta is a thing of the past? Follow these simple modifications and your favorite appetizer can be invited back to your next party! Farm fresh tomatoes, basil, salt, and olive oil make for a quick bruschetta.

Ingredients

Ingredients for Tomato Bruschetta:

2-3 fresh tomatoesFresh basil, finely shredded

Extra Virgin Olive Oil (I use Whole Foods, 365 Everyday Value Brand; http://www.wholefoodsmarket.com/about-our-products/product-lines/365-everyday-value)

Sea Salt or Himalayan Salt


Ingredients for Gluten-free Toast Rounds:

1 package of Udi’s Classic French Dinner Rolls; http://udisglutenfree.com/products/classic-french-dinner-rolls/

Clove of fresh garlic

Extra Virgin Olive Oil (I use Whole Foods, 365 Everyday Value Brand; http://www.wholefoodsmarket.com/about-our-products/product-lines/365-everyday-value)


Directions

Directions for Bruschetta:

Coarsely chop the tomatoes, add shredded fresh basil and salt to taste and drizzle in some olive oil.


Directions for Gluten-free Toast Rounds:

Serve with garlic toasts made with Udis Gluten-free Dinner Rolls (I usually find these in the freezer isle in the Gluten Free section)– diagonally slice into ½” ovals, brush with olive oil, bake at 400 degrees F until golden, rub with fresh garlic and you’re ready to serve!
