Carrot & Candied Ginger Salad


3 large carrots, peeled & shredded (about 2 cups)
1/2 Tbs Fresh lime juice
2 Tbs Dairy-free yogurt (I used Forager Dairy-free Cashewgurt)
1 Tbs chopped candied ginger
Grated lime peel from 1 lime


Place grated carrots in a bowl. Add fresh lime juice, toss. Add dairy-free yogurt & toss again. Stir in candied ginger, grated lime peel & a little freshly ground Himalayan salt. Refrigerate until ready to serve. Makes 3-4 side dish servings.
