Cherry Almond Kale Salad

Prep Notes

This salad is so delicious, it’s hard to stop eating it! It can be made a day or two ahead of when you’ll be serving it. It combines the bitterness of kale with the sweetness of dark cherries, all tossed in a sweet & savory dressing. The sliced almonds add a welcome crunch!


Ingredients for dressing:
1/4 cup extra virgin olive oil
1/4 cup fresh pitted bing cherries
1/2 Tbs fresh lemon juice
Sprig of fresh basil
Sprig of fresh mint
1 tsp raw honey
1/4 tsp Dijon mustard
1/4 tsp sea salt
1/8 tsp pure garlic powder

Ingredients for salad:
10 cups fresh kale, stems & ribs removed, washed & torn into bite sized pieces
1 1/4-1 1/2 cups bing cherries, pitted & halved (a cherry pitter comes in very hand for this!)
1/2 cup diced celery
1/2 cup sliced raw almonds


Directions for Dressing:

Place all ingredients in a food processor and blend until smooth

Directions for Salad:

Pour prepared dressing in the bottom of a large bowl. Top with kale and toss to coat all of the kale. Add cherries & celery & toss again to combine. At this point salad can be covered and refrigerated until ready to serve. Right before serving, add sliced almonds and toss again to combine. Makes 4-6 good sized portions.
