Chicken with Mango Salsa

Prep Notes

We're on day six of the heat wave and once again my goal is to have a delicious dinner while keeping my kitchen cool! Dinner tonight is grilled boneless chicken breast with fresh mango salsa to give it a tropical flair! Pair it with grilled asparagus and a simple tossed salad and my meal is complete!


One boneless, skinless chicken breast per person

Ground paprika, ground cumin, dried oregano, powdered garlic, sea salt & pepper to taste (to season chicken)

One ripe mango, peeled and chopped

1 tomato, peeled, seeded and chopped

Red onion, to taste, chopped

¼ cup red pepper, diced

Jalapeno pepper, to taste finely chopped

Fresh cilantro, chopped

Sea salt & pepper to taste 

Fresh lime juice


Directions for the mango salsa:

Cube one peeled ripe mango. Mix in a tomato (chopped and seeded), some chopped red onion, to taste, red pepper and finely chopped jalapeño pepper to taste. Add chopped cilantro, sea salt and pepper and fresh lime juice (about half a lime)

Directions for the grilled chicken breast:

Allow one chicken breast per person. Season bonesless chicken breasts with to taste with pure ground paprika, pure ground cumin, oregano, garlic, sea salt and pepper. Grilling times will vary depending on size and thickness of chicken; check with your butcher on cooking times for what you're preparing and make sure it's cooked all the way through and juices run clear. Top grilled chicken breast with mango salsa.
