Chicken with Tomato & Basil

Prep Notes

Easy, quick and delicious "Friday Eve" dinner!


One boneless, skinless chicken breast/serving

Sliced tomato (2-3 slices per serving)

Extra virgin olive oil for drizzling (I use Whole Foods, 365 Everyday Value Brand;

Sea salt & pepper to taste

A sprinkling of garlic powder

Fresh basil, shredded


For each serving, place a boneless chicken breast on a large piece of foil which has been drizzled with olive oil. Season chicken with sea salt, pepper & garlic. Place 2-3 tomato slices on top of chicken. Roll up the sides of the foil to create a packet and bake at 400 degrees F for 35 minutes (or until done, depending on thickness of chicken breast). Top with shredded fresh basil. Good served with sautéed zucchini with garlic, sea salt, pepper and more shredded fresh basil or parsley, and a baked sweet potato with cinnamon. Gluten-free, dairy-free, soy-free, paleo & all whole 30 approved ingredients.
