Chocolate Peanut Butter Collagen Cups

These chocolate cups are a decadent way to get some extra collagen protein and healthy fats into your day!

Ingredients

1/2 cup unsweetened all natural peanut butter
1/4 cup coconut oil
1/2 cup unsweetened cocoa
3 Tbs collagen powder (I used Ancient Nutrition Multi Collagen Protein)
2 Tbs raw cacao nibs
1 tsp pure maple syrup (add more to taste if desired)
Coarse Himalayan salt

Directions

In a small saucepan melt peanut butter and coconut oil over low heat. Stir to combine.

Add cocoa, collagen powder and maple syrup. Blend with a hand blender until smooth. Stir in cacao nibs.

Line a mini muffin pan with paper liners. Spoon into prepared cups. Sprinkle with a little coarse Himalayan salt on each cup. Place in freezer about 30 minutes or more until completely firm. Store in the freezer. Makes about 12 mini cups.
