Cookie Dough Brownie Cup Delights


Ingredients for brownie layer:

1 large egg

1 cup almond butter (at room temperature)

1/3 cup pure carob molasses (or pure maple syrup or raw honey)

1/4 cup unsweetened cocoa

2 Tbs coconut flour

1/2 tsp baking soda

1 tsp pure vanilla extract

Ingredients for cookie dough layer:

2/3 cup coconut oil

1 cup coconut palm sugar

1/4 cup unsweetened applesauce

1 tsp pure vanilla extract

1 3/4 cups almond flour

1/2 tsp baking soda

1/2 tsp sea salt

1 cup mini Enjoy Life Foods brand semi-sweet chocolate Mini Chips

Ingredients For ganache topping:

1/3 cup coconut oil, melted

1/2 cup unsweetened cocoa

2 Tbs pure maple syrup

Dash of sea salt

Dash of pure vanilla


Directions for brownie layer:

Preheat oven to 350 degrees F. In a large mixing bowl, mix together almond butter, egg, carob molasses (or sweetener of choice) and vanilla. Stir until smooth. Add unsweetened cocoa, coconut flour and baking soda. Stir to combine. Spread into cups in a silicone cupcake pan (I used a silicone pan with heart shapes) and press evenly into each of 6 cups. Bake 10-12 minutes. They'll look soft & moist but will continue to cook. Let cool completely while you prepare the cookie dough layer.

 Directions for cookie dough layer:

With an electric mixer mix coconut oil, coconut palm sugar, apple sauce and vanilla until smooth. Sift together almond flour, baking soda and salt. Slowly add

to coconut oil mixture. Mix in chocolate chips.

Spread evenly on cooled brownie cups and place in refrigerator until firm. Prepare ganache topping.

Directions for ganache topping layer:

Mix all ingredients until smooth. Spread evenly on top of cookie dough layer. Place in refrigerator until firm (about 10-15 minutes). Very carefully pop Cookie Dough Brownie Delights out of silicone molds and keep refrigerated until ready to serve. Makes 6 Delights

Note: there will most likely be some cookie dough left. I took the opportunity to roll the leftover dough into balls to make Cookie Dough Bites. Keep them in the refrigerator for about a week or in the freezer for a longer period of time. Take out and thaw for an occasional delicious treat! You could also dip them in some Enjoy Life baking morsels melted with about a teaspoon of coconut oil to make some scrumptious cookie dough truffles!
