Crustless Sweet Potato Pie Side Dish

Looking for a quick & easy healthy side dish to go with dinner tonight? How about a crustless “sweet potato pie”? Filled with freshly grated ginger, turmeric, cinnamon & nutmeg, this dish is not only warm & comforting but is chock full of anti-inflammatory & antiviral spices.


1 extra large or 2 regular size sweet potatoes, peeled and cut into chunks

1 Tbs freshly grated ginger

1 tsp ground cinnamon

1 tsp ground turmeric

1/2 tsp ground nutmeg

Himalayan salt to taste


Place peeled sweet potato chunks in a large pot and fill with about an inch of water. Cover & bring to a boil for about 20-30 minutes or until fork tender. Drain water & mash well. Mix in freshly grated ginger, cinnamon, turmeric, nutmeg & Himalayan salt to taste. Place mixture in a shallow oven safe dish or pie pan, greased with coconut oil. Add to the oven with the rest of your meal during the last 15-20 minutes of cooking time to warm it up and make a nice little crust. Serves 4-6, depending on the serving size.
