These cookies are extra are chewy with a rich chocolate flavor
3/4 cup gluten/dairy/soy-free chocolate chips (I use Enjoy Life brand), melted plus additional 2Tbs of chocolate chips
Pinch of sea salt
1/2 Tbs white vinegar
2 large egg whites
1/2 cup coconut palm sugar
1/4 cup dried cherries
Preheat oven to 325 degrees F. Line 1 or 2 baking sheets with parchment paper.
Place vinegar and salt in a large bowl, add egg whites and beat until foamy on medium speed. Continue beating until stiff peaks form.
While beating, slowly add sugar and mix on high speed for 5 minutes or more. Add a small amount of the melted chocolate and mix in well. Gently fold in the rest of the chocolate.
Stir in the chocolate chips and dried cherries
Soon mixture into a large pastry bag or gallon food storage bag with a corner snipped off.
Pipe into 1-1 1/2” rounds on parchment lined baking sheets and bake for 8-10 minutes, until tops no longer look moist. Let sit for 10 minutes before transferring to a cooling rack to cool the rest of the way.
