This is sweet & savory side dish that adds a nice splash of deep color to your meal. The dried cherries & apricots add a nice sweetness while the toasted hazelnuts add a welcome crunch! Goes well with simply roasted chicken, turkey or pork loin.
2 pkgs (14oz each) forbidden black rice
1 cup of toasted hazelnuts
1 cup dried cherries
1 cup dried apricots, chopped
2 Tbs Melted coconut oil
1/3 cup chopped fresh parsley
1 1/2 tsp sea salt
Preheat oven to 350 degrees F. Cook rice according to package directions (it’ll make about 14 cups cooked rice)
& place in a large bowl. Add hazelnuts, cherries & apricots. Toss with melted coconut oil. Stir in chopped parsley & sea salt. Season with additional sea salt to taste. Spoon into a large casserole dish and bake for about 25-30 minutes until heated through. A great make-ahead side dish that can be prepared ahead then baked or warmed before serving. Makes about 18-20 servings.
