Happy Orchard Chicken Salad

Prep Notes

The apple makes this salad refreshingly crispy, the walnutsmake it deliciously crunchy and the chicken makes it a filling meal!


4-5 cups diced cooked chicken

1 cup of diced celery

½ cup chopped raw walnuts

1 large, crisp apple, seeded and chopped

¼ cup raisins

¾-1 cup Just Mayo by Hampton Creek Egg-Free Non-GMO Spread & Dressing

1-2 Tbs dijon mustard

1-2 Tbs fresh lemon juice

1 tsp ground cinnamon

Sea salt and pepper to taste


In a large bowl, mix together first 5 ingredients. Add lemon juice, Dijon mustard and Just Mayo by Hampton Creek and mix well. Sprinkle with cinnamon, mix again. Add salt and pepper to taste. Feel free to add more or less of any of the ingredients to suit individual tastes! Serve on a bed of lettuce. Makes about 6 cups.
