This is a fun way to use this unique vegetable!
4 kohlrabi cleaned, with leaves removed & with outer skin removed
Olive oil for drizzling
1 tsp sea salt
1 tsp smoked paprika
2 Tbs nutritional yeast
Preheat oven to 425 degrees F.
Slice kohlrabi into "French fry" shaped slices. Place in a bowl, drizzle with a latter olive oil and toss with sea salt, smoked paprika and nutritional yeast.
Spread evenly on a rimmed baking sheet lined with parchment paper. Bake for about 25 minutes, flipping halfway through until cooked all the way through and crispy. Makes 3-4 servings
