Putting a fresh twist on a classic comfort food by using parsnips instead of traditional potatoes for my side of fries!
1 large parsnip
Drizzle of extra virgin olive oil
1 tsp sea salt
2 Tbs nutritional yeast
Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper. Peel parsnip and cut into French fry shaped sticks. Place in a bowl, drizzle with a little olive oil and toss with salt and nutritional yeast.
Spread parsnip fries out on the lined baking sheet and bake for 25-30 minutes or until cooked through and crispy, flipping fries halfway through cooking.
