Pecan Maple Chicken Fingers

The flavors of fall are abundant in this cozy and comforting paleo meal of pecan maple chicken tenders. Great served with cinnamon sprinkled baked sweet potato!


1 cup raw pecans

½ tsp sea salt

1 Tbs pure maple syrup

1 lb boneless chicken breast tenders

3 Tbs coconut oil


Place pecans in the work bowl of a food processor. Pulse until finely ground; stopping to scrape bowl as needed. Mix in the salt. Place in a shallow dish (a pie pan works well).

Melt 2 Tbs of coconut oil, mix with pure maple syrup and place in another shallow dish/pie pan.

In assembly line fashion, dip chicken tenders in coconut oil/maple syrup mixture and dredge in ground pecan mixture. Place in another dish until ready to cook. This step may be done ahead if desired; once all chicken tenders have been coated; you can cover and refrigerate until ready to cook.

To cook, place 1 Tbs coconut in a large frying pan and melt over medium heat. Cook chicken tenders for about 10 minutes, turning over halfway through or until thoroughly cooked, chicken is no longer pink and juices run clear. Serves 4.
