Roasted Honey Ginger Root Vegetables

A tasty way to freshen up some ordinary root vegetables and add a special touch to any meal! The turmeric makes the turnip turn a pretty lemony shade of yellow, which when combined with the carrot makes a brightly colored dish! Makes 2 side dish servings


1 small turnip, peeled & diced
2 carrots, peeled & diced
1Tbs extra virgin olive oil
1 tsp turmeric
2 tsp freshly grated ginger
1 tsp raw honey
Freshly grated lemon peel from 1 lemon
Sea salt & pepper to taste
Freshly chopped parsley for garnish


Preheat oven to 400 degrees F. Place diced carrots and turnips in a shallow 8” or 9” glass or ceramic casserole dish. Toss with olive oil. Sprinkle with turmeric, grated ginger & lemon peel. Gently toss. Drizzle with honey and toss again to thoroughly combine. Add sea salt and pepper to taste. Bake for 35 minutes or until fork tender. Garnish with fresh chopped parsley. Makes 2 side dish servings.
