Roasted Tomato & Canadian Bacon Quiche

This savory quiche makes a hearty meal! Roasting the tomatoes really adds another depth of flavor!

Ingredients

1-2 plum tomatoes, chopped
2 slices Canadian bacon, chopped
1/2 tsp dried oregano
Olive oil for spritzing
1 slice Dairy free cheese alternative (I used Follow Your Heart brand smoked Gouda style slices)
6 eggs, slightly beaten
2/3 cup unsweetened almond milk

Directions

Preheat oven to 400degrees F. Prepare crust, set aside
Sauté chopped Canadian bacon on medium heat for a few minutes until browned & crispy, set aside. Line a rimmed baking sheet with parchment paper & place chopped tomatoes on it. Spritz with olive oil and sprinkle with dried oregano. Roast for about 10 minutes. Let cool. Tear cheese into 1” pieces, scatter evenly on crust. Sprinkle Canadian bacon over cheese, and then add cooled tomatoes. Mix slightly beaten eggs & almond milk and pour over crust & fillings. Bake for about 30 minutes or until firm and set. Great served with a simple garden salad.

Notes

This recipe is gluten-free, soy-free & grain-free. Can be made Paleo if the non-dairy cheese alternative is omitted.
