Savory Chicken Salad


1-1 1/2 cup cooked chicken, diced

1 cup of celery, diced

1/2 cup of carrot, diced

1/2 cup of raw cashews, coarsely chopped

1 generous tablespoon Dijon mustard

1/2 cup Just Mayo brand spread & salad dressing by Hampton Creek

Generous squeeze of fresh lemon

1/4 cup chopped fresh parsley

Salt & pepper to taste


Mix all ingredients together, adding more of any of the ingredients to get desired taste and consistency. Serve well chilled on a bed of lettuce. Makes 4-6 servings depending on size of servings.
