Simple Roasted Mixed Nuts

Starting to get things ready for Thanksgiving dinner! Thought some mixed nuts would be a nice addition to the appetizer lineup. Sadly the packaged nuts on the supermarket shelves had lots of processed ingredients and possible allergens for some coming to dinner so I decided to make my own easy paleo roasted, salted nuts.


6 cups of assorted raw nuts

1/3 cup of extra virgin olive oil (I use Whole Foods, 365 Everyday Value Brand;

Sea salt to taste


Here’s my recipe-Mix raw assorted nuts of choice (I used pecans, almonds, cashews, hazelnuts walnuts and Brazil nuts) with extra virgin olive oil. Toss with sea salt. Spread on rimmed parchment paper lined baking sheet. Bake for 10-12 minutes in oven preheated to 375 degrees F. Sprinkle with additional sea salt to taste. Let cool. Pour cooled nuts into a brown paper bag, close and shake for a few minutes to absorb extra olive oil. Store in an airtight container.
