Slow Cooker Paleo Honey Ginger Pulled Chicken

There’s a chill in the air! Time for some warm and comforting slow cooker meals! Paleo Honey Ginger Pulled Chicken is the perfect way to welcome in the cooler days ahead!


1/4 cup raw honey

1/4 coconut aminos (I use Coconut Secret brand)

1/4 tsp pure garlic powder

1/2tsp pure onion powder

1 Tbs freshly grated ginger

1 1/4-1 1/2 lbs boneless skinless chicken breast

Salt & pepper to taste


Combine honey, coconut aminos, garlic, onion & ginger in a slow cooker. Add chicken and toss to coat.

Cover and cook on low for 7-8 hours or on high 3-4 hours or until chicken is fully cooked. Remove chicken from slow cooker and place in a large bowl. With 2 forks, shred chicken. Place shredded chicken back in slow cooker, add salt and pepper to taste and additional freshly grated ginger if desired. Good served on "riced cauliflower" or in lettuce cups.
