Stove Top Taco Casserole

There's nothing better on a cold winter night then a meal filled with warm spices! Delicious, protein packed paleo Stovetop Taco Casserole!


2 zucchini, chopped

1 clove garlic, chopped

1-2 tomatoes, chopped

1 lb of ground turkey, browned

extra virgin olive oil for sautéing vegetables (I use Whole Foods, 365 Everyday Value Brand;

1 tsp ground cumin

1 tsp paprika

¼ tsp powdered garlic

½ tsp dried oregano

Chopped fresh cilantro

Sea salt and pepper to taste


In a large frying pan drizzled with olive oil, over medium heat, sauté zucchini and garlic until soft. Add chopped tomato, cooking until tomato is soft. Add the browned ground turkey. Season with cumin, paprika, garlic powder, oregano, sea salt & pepper to taste & finish with lots of fresh, chopped cilantro before serving. Serves 4-6 depending on whether it’s served with salad or other sides.
