This dish makes a tasty side dish that goes nicely with most any roasted meat; or a hearty vegetarian or vegan main dish. The sweetness of the dried cherries and crunch of toasted hazelnuts makes a flavorful combination.
1 lb quinoa, or plain quinoa & brown rice blend
1 cup toasted hazelnuts, coarsely chopped
1/2 cup dried cherries
1/2 cup chopped fennel
1/4 cup olive oil
1/4 cup white wine
1 Tbs honey
1 Tbs balsamic vinegar
1 tsp sea salt
A bunch of coarsely chopped fresh parsley
In a large pot or Dutch oven, cook quinoa or quinoa/rice combination according to package directions.
Add toasted hazelnuts, dried cherries, fennel & gently mix. Add olive oil, wine, honey and balsamic vinegar. Mix again. Add sea salt and toss until thoroughly combined. Taste. Add more of any of the ingredients to suit your taste. Makes about 10 side dish servings or about 6 main dish portions.
