This refreshing smoothie reminds me of one of a cool, creamy slice of Key Lime Pie in a glass! A delicious, protein filled breakfast, lunch, healthy snack or dessert!
2/3 cup of unsweetened almond milk
1 pitted date
1/2 tsp pure vanilla extract
1/2” slice of avocado
2 heaping teaspoonfuls of coconut butter
4 Tbs egg white protein powder
2/3 cup fresh ripe pineapple
1 whole lime, quartered, *see note
3-4 ice cubes
Unsweetened shredded coconut for garnish
Place all ingredients on a high speed blender and blend until smooth, stopping to stir when necessary.
*note-if using a high speed blender, such as a Vitamix brand blender you may be able to use an unpeeled fresh lime. Not all blenders are able to blend a lime with the peel & you don’t want a broken blender! If that is the case with the blender you’re using, use the juice from one whole lime and the grated peel from a whole lime instead of putting the an unpeeled lime.
