Tropical Pina Colada Smoothie Bowl

This refreshing treat tastes like a tropical vacation in a bowl! Just add a cute little umbrella!


3 cups frozen pineapple chunks

½ cup unsweetened shredded coconut (plus additional foroptional garnishing)

1 cup full fat canned coconut milk

Juice from one lime

Optional chopped fresh pineapple for garnish


Put all ingredients in a high speed blender and blend until smooth and creamy. Pour into bowls, garnish with additional unsweetened coconut and fresh pineapple. Makes 3 generous servings.
